Peanut Butter Choc Cupcakes with Cream Cheese Frosting

This is not a food blog, but every once in a while I get creative with recipes and want to share how it turned out.  Therefore, today I share with you my delicious Peanut Butter Chocolate Cupcakes.  I mostly adapted the recipe from this one.  I did make a few changes though and it turned out quite scrumptious.





Ingredients:

1 cup flour 
1 teaspoon baking powder 
1/4 teaspoon salt 
6 tablespoons unsalted butter, at room temperature 
3/4 cup peanut butter, at room temperature 
1/2 cup dark brown sugar, packed
1/2 cup sugar 
2 large eggs 
1 teaspoon vanilla extract 
1/2 cup whole milk 
1/4 cup cocoa powder


Preheat oven to 350 degrees.  Line a 12-cup muffin pan with cupcake liners.  Bake for about 20 minutes or until you stick a fork in and it come back out mostly clean-a little goo is okay! I then topped these babies off with cream cheese frosting, not homemade, although there are many good recipes for that on Pinterest.

Baking is therapeutic for me.  It's just something I really enjoy doing when I have a little bit of time to myself.  Some good music always adds to the setting as well.  Hope you enjoy as much as I do! NOM!
